Let’s Celebrate Spring! Strawberry Shortcakes (Makes 9)

Spring in New England is the perfect time for serving this beautiful, famous dessert. We were pleasantly surprised to find that macerating the strawberries in powdered erythritol produced an identical effect to macerating in regular sugar – and without all the carbs!

Ingredients:

1/2 recipe (9) LCHF Nation Shortcakes (see recipe on page 137 of our LCHF Nation Cookbook #1)
1/2 lb strawberries
1/2 cup powdered erythritol
1 cup heavy cream
2 tbsp erythritol
1/2 tsp vanilla

Preparation:

1. Slice the strawberries and sprinkle on 1/2 cup powdered erythritol. Let sit for 3 hours or until macerated.

2. Whip the cream, 2 tbsp erythritol and vanilla.

3. Slice shortcakes in half, and layer decoratively with strawberries and whipped cream

Nutritional Information per strawberry shortcake: 237 cals, 20.9g fat, 7.6g total carbs, 2.6g fiber (5g net carbs), 7g protein.
